I've always loved pomegranates. Saw a recipe for pomegranate shrub in a cookbook, made a batch and then BOOM - what do you do with a quart of sweetened pomegranate vinegar? Well, you drink it. Mostly on ice diluted with water or seltzer, but a pomegranate shrub cocktail seemed appropriate. A little sleuthing, and the following recipe was found.
Queen of the Underworld
1/4 oz fresh lime juice
3/4 oz pomegranate shrub (homemade)
2 oz Reposado Tequila (Kirkland is surprisingly good)
Lime wheel garnish
Add liquid ingredients to a cocktail shaker 2/3rds full of ice, shake vigorously for 15 to 20 seconds, strain into a chilled cocktail glass or coupe, garnish and enjoy!
Bonus: I added 7 pomegranate seeds to the bottom of the glass too, because Greek mythology, Persephone, Hades and sheeeeit.
This was a good pour on a dank, misty Fall day. The reposado tequila is fairly elegant for fermented cactus juice, and the touch of lime with the sweet fruity pomegranate paired well with it. The vinegar in the shrub wasn't real noticable - more of a curious note that made you stop and wonder if that was really what you were tasting. A surprisingly good pour, and one that Mrs. Duck found quite palatable. It will be making a reappearance within the week I'd think.

P.S.: If interested in making pomegranate shrub, take two parts (by volume) of freshly pressed pomegranate juice (Pomme brand juice will work in a pinch if you'd prefer your kitchen not look like a slaughterhouse after juicing the fresh fruits), mixed with one part each minimally processed raw sugar and organic apple cider vinegar. Mix well and store in the refrigerator. Lasts a fairly long time - have some open bottles of shrub in the basement frig that are over a year old and still taste fine.
