There's a point where heat over rides the flavor. And that's assuming it has a good flavor, to begin with. Seems like many of these new "extreme" peppers taste like old book paper or dirty cigars

Cayenne is so versatile. There's a reason there's a few pepper varieties that are used for most hot sauce products.

On a side note, I am really looking forward to this summer because I'm gonna get to the hatch chili festival and I can't wait to see what they do with them because I ADORE their flavor
