Most bourbons come in the bottles as 80s-90s proof, but they come out of the barrels after aging at over 100. Definitely a sipping drink and I never mix my "cask-strength" bourbons with anything but ice (seems like it'd defeat the purpose/expense to cut it with water, or cover it up in a mixed drink).
Many distillers are selling a cask-strength now (or at least more widely than they used to), but a few of my favorites:
- Booker's, 130 proof, absolute no-bullshit wonderfulness (Jim Beam distillery)
- Bulleit barrel-strength, 119 proof, the cut of rye that Bulleit is known for shows through extra here
