We had thighs and wings tonight.
My recipe:
Preheat oven to 425F
Line baking sheet with heavy aluminum foil. Spread olive oil on the part of the foil where the chicken will lie.
Pat dry the chicken with paper towel. Sprinkle generously with salt, pepper, and oregano.
Place on baking sheet then into the oven
Bake for 20 minutes or until internal temperature is 140/145. Remove from oven and cover loosely with foil for another 5 minutes to continue cooking away from the heat (I put them on a plate and then cover).
Serve
