In south Texas (and San Antonio is far enough south) there are pretty much zero basements. is why.

The Alamo was originally a Spanish mission Roman Catholic church. The entire church would be made with locally sourced materials. The only reason I could imagine there's no basement or cellar to the structure is because it's entirely earthen works and locally sourced stone.

Not quite. It was a fortified military compound built sometime in the 1700's and then later abandoned. Most likely disease wiped out the native converts, the nearest Bishop probably then ordered the priests back to the nearest Spanish city, and the Garrison stationed at the fort for their protection followed suit. It likely wasn't in use long enough for the missionaries to consider acting on any long term plans for the site beyond digging a well.

However, that's all speculation on my end.
