The adams apple is a side effect of the presence of the thyroid. If you ever performed a dissection even on a pig in a highschool lab you can see the adams apple and cut into it to find that it is just the cartilage surrounding the thyroid.
Men have a larger adams apple because their thyroid is larger since it produces a lot more hormones than women do. There are people who have had their thyroid removed due to cancer mostly and they still live but there's a lot of side effects and they need medications to stay alive. But every case of that I've heard of has occurred post-puberty. Not sure what would happen if a kid had their thyroid removed prior to puberty...
