Watched the same dude shoot .50 at a deer- just missed high, but the pressure and energy of the close passing .50 cal projectile blew the deer's eyeballs out of its head and killed it.
I don't think that's what happened in that video. Others have tested the force of the turbulence caused by a passing bullet and found it isn't enough to disrupt stacked playing cards, never mind exploding a deer's eyeballs. I think it's much more plausible that the round passed cleanly through soft tissue in the snout and the hydrostatic shock of that impact was enough to destroy the brain while leaving the skull in tact.

I think your analysis sounds more likely than the videos explanation of a miss exploding the deer's innards.
