Races are subspecies. The classical definition of a species is a group whose members can mate to produce fertile offspring. Donkeys and horses are separate species because the hybrid form - the mule - is infertile, but dogs and wolves are the same species because wolfdogs can breed. This is important biologically because if the two populations can produce fertile offspring then they may exchange genes in the future.
