It takes an extra bit of meanness to actually stick somebody with a knife. No matter how hard you think you are, that might be a line you can't cross readily. That guy was desperate, and did not want to actually stick anybody, until they pushed him too far for too long and then he almost chased after them, I could see him forcing himself to stop.
If they hadn't walked away right when they did, he would have stabbed one of them. They must have instinctively known to back off.
