So the device just logs the data locally and uploads the next time you turn WiFi on.

It runs vanilla linux, so no. Theoretically if the system on chip bits and bobs have capacitors built into them they could keep on data logging but since the switches physically disconnect the devices from the rest of the device all they will be able to upload is "maybe" gps tracking data.

Realistically though, no.

My point is that if you don't trust the device's software, the switches won't help (except to prevent them from getting real-time data). If you do trust the device's software, you don't need the switches.
