Easy as fuck. Take some cheese, like a good old cheddar, and plop a good pinch (however big you want them, really) of shreds in a hot frying pan. I use my cast-iron skillet to make a bunch at once. They melt and then crisp up. Fry them 'till they're golden brown; make sure to flip them at some point. Boom. Cheese chips.

Some people are crazy and can shape them in to taco shells and stuff. I've never tried that.
