Pretty much, I've met one person who actually was. Before it became a fad she actually would accidentally eat something with gluten and I could visibly see a change in her.

But yeah, all the others are a bunch self righteous little cunts.

By eliminating gluten from their diet entirely they become more sensitive to it. If they gradually introduced gluten into their diet consistently, slowly consuming more, their sensitivity could be fixed. This can be done with many allergies. For instance, peanut allergy is more prevalent and more sevwre in children who were not exposed to peanuts at a young age.

Do you think the same could be said of lactose intolerance?

Possibly but I haven't read anything on lactose intolerance specifically.
