By eliminating gluten from their diet entirely they become more sensitive to it. If they gradually introduced gluten into their diet consistently, slowly consuming more, their sensitivity could be fixed. This can be done with many allergies. For instance, peanut allergy is more prevalent and more sevwre in children who were not exposed to peanuts at a young age.

Do you think the same could be said of lactose intolerance?

Possibly but I haven't read anything on lactose intolerance specifically.

Seems very similar in situation to me but nobody cries when they're lactose intolerant they avoid milk. Same could be said of Asians that do produce enough Dehydrogenase so two drinks and they're vomiting where as someone Irish can have 12 or more and be fine.
