I remember, after learning that most Mexicans were half Spanish and half native, wondering which half it was that I couldn't stand. Then I visited the Navajo reservation and discovered it wasn't the Spanish half that I hated. They had the same litter everywhere, graffiti, and pitbulls roaming free just like Mexico.

Not as clear cut as all that. This is why Northern Mexico has different food tranditions than Southern Mexico.
Spanish food has various influence from Arab and Islamic cultures as well as Europeans. This in turn was infused into Northern Mexican food as well as the more re-Europeanized variants known as Tex-Mex.
Basically the Spanish are Europeans with Arab admixtures. Northern Mexicans are Southern Mexicans with European and Arab admixture (Spanish). Not to mention some amount of straight European admixture.
I'm pretty sure Spanish have Moore admixture as well.
The Islamic invaders of Spain were more Berber than Arab. It is bizarre that all Muslims in the Middle East and North Africa call themselves Arab.
