That is fascinating. You're correct, there is a clear difference. I'll have to look into this. There are acids that break down from plant matter that will damage your esophagus and gi tract. There are also foods that create noxious fumes from the same in the lower gi.

I wonder if this term is used in distinct senses.

Yeah, fermentation is distinctly controlled, though in the case of the colon, it's your body automatically controlling it. I suppose you can get unhealthy gut flora, like after you take anti-biotics.
