In nature viruses have two selective factors infectiousness, and mortality if a virus is too deadly it kills it's host too quickly for the virus to spread, invariably this means less deadly mutations of a virus are more successful because they are more likely to be spread. When you try to generate immunity artificially with vaccines you are either giving them a similar disease which is far less serious or giving a weakened form of the virus to a person in the hopes that they have just barely enough of a fight with the virus that they develop successful antibodies. Cow pox didn't give you immunity to small pox, it gave your body a jump in the antibody arms race, with a weakened virus its possible your immune system overcomes the virus too quickly and you develop either no antibody structures or you develop one that just doesn't work or doesn't work well, your body will have filed it away as an effective antibody though, and will actually make you sicker from the disease because your immune system will keep using ineffective antibodies untill it realizes it isn't working, that's typically not until the disease provokes a higher level immune response than the inoculation which means your body is hours or days behind on its own antibody trial and error experiments. Fair enough , I should have assumed you meant such, but the spike protein after folding is a very convoluted little beast, confirmed by S.E.M. imaging and rendered by bioinformatic protein software from its sequence back in January 2020, based on earlier SARS-1 imaging.

Its just that the spike is one protein (S-2P protein) with two common stable folding shapes, not three, though probabilistic alternative 3D foldings are possible :
