If you know why the Italian guy is right, then you can cook.

Fucking hate people who think only Italians can make Italian food, only Vietnamese can make Vietnamese food ect. Like it's so fucking hard to follow a recipe. If it tastes good, that's the correct way. Don't give a fuck how your fat ugly mother made it.

Everyone says that. I used to as well. Until they try the real thing.

Here is a video of Gordon butchering a carbonara + a real carbonara: https://www.youtube.com/watch?v=E4a7WxMdx3I

Watch the real carbonara at the end. Cheaper, faster, simpler and better than Gordons attempt. Why couldn't Gordon just make the original instead of his monstrocity with fucking peas?

I agree with your sentiment, if it tastes good it is good. But, there is a hidden dismissal of the following in that statement: 10 years of billions of individual brains will allways be smarter than 10 billion life times of a single individual.

But, it gets worse.

Only certain cultures have fully learned to cook. The french, italians, south americans and east asians know how to cook. All other cultures don't. Especially the English and the Slavs. Even if they have a few great dishes here and there, they are culinary butchers.

Analogously, there is a great video from the 50s of a famous classical musician explaining how music theory was slowly discovered over a period of 2000 years by different cultures, the various modes and all that stuff. Of course, most of the music theory was discovered (and finally filled out in the last 400 years or so) by europeans, similarly most cooking techniques were discovered by only a subset of countries in the world.

Fair comment though.
