Thats actually pretty ingenious. But what's the bait? Are they just curious or wanting the water or is there bait somewhere I didn't see?

There's strong smelling oils you can spread on the inside of mouse traps to make them attractive. Smells like food, but there's no way they can actually eat it all. And once they're trapped they're only thinking about escaping, not investigating nice smells.

No idea if that's what he used here. I saw him using them in other videos.

No expert on mouse behavior, but curiosity probably plays a big role in this. Plus, it's a small space, which in theory makes them safer for predators, which is one reason why they might be interested in exploring it.
