Shouldn't default subs be based on the most subscribed (therefore most relevant) subs?

Not at all.

Default subs where chosen at the early days of poal and they have no influence on the /all front page (no subs have).

We even try to suggest user subs where the moderation is done by their own mods (instead of admins in default subs).

So then moving a post that is easily as relevant to /s/News as it is to /s/USPolitics is a way to keep certain subjects off the main page, right? For that matter, why not move it to another default sub like /s/Politics instead? Why is this post allowed to stay in /s/News when it is also US/Politics related? Why waste so much time moving posts in the first place if you aren't consistent?

You answer is in /s/News sidebar.

That doesn't answer any of the questions, and only makes the question about moving from a default sub to a non-default sub more relevant. Why was this thread moved to /s/USPolitics instead of /s/Politics?
