"Ancient diet was piss poor" that is hilarious considering most people eat today is GMO or fast food ! Now they could have been starved in Egypt, but I doubt it as it would have affected their ability to work... I suspect they were strong and fit and fed basic foods... Why do I make these points because you're downplaying the nephilim by saying the 10 spies were terrified of well-fed and slightly taller people... If you ever saw a miracle, how much would it take to make you doubt or fear...
IMO Canaan was infused with real nephilim at the time, not well-fed facing malnourished people... Highly possible the 10 spies exaggerated their size, "we were like grasshopper" seems a little outrageous I admit...
I have done a lot of research on nephilim and giant skeletons found worldwide, It is a fascinating subject I suggest not to discredit it as there is more evidence of giants like bones even complete skeletons, even giant fossilized footprints...
For example: Native American "red haired giants" {in modern day Nevada so not vikings} that would hang deer from their belt like a normal man would a rabbit... South American weird elongated skulls... Giants are in almost every ancient civilization's folklore...

Literally speaking it'd be an absurd exaggeration due to the square-cube law. Metaphorically speaking it may be an exaggeration, but it's not unreasonable to be intimidated by an opponent whose average soldier has 8-10" of height and comparable advantages in muscle. If you've ever been involved in a melee-based martial art or even just fought with boffer "swords", that type of advantage in reach is a curbstomp that's comparable to male vs female athletic competitions where average high school males beat Olympian females.
Which is why David was so remarkable. Saul tried to give him armor and weapons and David declined it because fancy equipment wont do jack when your opponent can stab you from out of your reach. And why using a shepherd's sling was so clever since it outranges even the tallest man's melee.
