Since I'm a Farmer, I can tell you that right off the top of my head. Mexico had corn, but it was small, not very much to eat. For years and years, the farmers selected the largest ears to replant for next year and so on. A century-plus later, corn as we know it was born.

The University of Nebraska developed, not through DNA modification but natural selection, a huge variety, one that we use today for Ethanol production and feed.

Of course it is more involved than that, but that's a quick overview.
