FWIW, I made dinner tonight.
I put two NY strips into the sous vide at 120 degrees. When they were at temperature I roasted Brussel sprouts that were seasoned with olive oil, fresh garlic, and sea salt as well as russet potatoes that I baked in the air fryer.
A quick sear on the grill for char and everything onto the plates.
