That's a country. What dishes? For instance, Boeuf Bourguignon is a stew made from leftover beef. French onion soup was peasant food. Most food has evolved from peasant food.

Basically, it doesn't matter if something was peasant food. Lobster in the north east was peasant food originally. Most high end dishes have evolved for it.
