Yes, but the ethnic food people talk about is what other cultures deemed good enough to import. The stuff that was salable in spite of being foreign. It’s a curated list, like “oldies”. Most oldies are just crap pop songs of another time that nobody now would want to listen to. The ones you hear today are the really good ones.
