It could be that it was chosen for the image simply because it is the oldest of their synagogues still standing from that era and because it was made a national historical site.
They most certainly discussed/negotiated prices there before getting to the pier to get their loot.
My guess is that they chose it to show people it was jews who were predominantly running the slave trade and owned plantations.
