Why can't you have some sort of... read only chip? That has the original, tested, working, firmware, that you can revert to.

It's those "tested" and "working" bits they never planned on actually having ready before time to market. Why invest all of that time and effort when the customer can be your QA and testing department? That's how these companies seem to operate now. I think Microshaft actually does operate this way.
