As someone who has worked in that industry for a long time, they can be decent servers, and ok bartenders. Everyone thinks you want to get a hot lady bartender, because that will bring the guys there. Absolute horseshit. That ends with you having a bar full of a bunch of thirsty guys who get pissed off when the bartender flirts with the other guys at the bar. What you really want is either a popular gay guy or a really hot straight dude at the bar. Both of those will bring ladies to the bar, which in turn bring men to the bar. I used to fulfill both of those roles myself.
