I have been buying Costco's ribeye lately. They have been excellent, the price has been slowly climbing till last friday when they dropped back down to almost pre Biden* prices. It's been too cold to charcoal grill, so I have been using a 100+ year old cast Iron pan to sear them and bring them to a crispy but still rare temp. With just a little butter to get the sear started and fresh ground rock salt and fresh cracked melody pepper. Dammit, now I have to make a stove steak for lunch, maybe with a side of swiss chard.
I really enjoy sous vide for a couple of hours with thyme and bay leaf, salt, pepper and garlic then pan finish with butter. Use the juices from the bag to finish some sous vide asparagus in the pan.
I got the asparagus from someone on poal a while back.
I'll be having English muffin pizzas...
also a favorite, Thomases toasted, with Kirkland marinara, pinch of Italian seasoning, and a Galbani mozzarella stick pulled apart, then thrown under the broiler.
There's a rumor that Harris ranch uses m. RNA vaccines on their cattle, so just saying. Costco gets their beef from Harris ranch. I'm not saying it's true. I'm just saying there's a rumor and you might want to look into it.
Rock salt? Calcium Chloride?
sodium chloride, just in larger crystals, so you can grind it in a salt grinder.
