All my good knives came from estate sales. Pennsylvania steel from back in the day is something else.

I’m jealous. Now I have to start researching PA steel. Every knife I’ve purchased (global, cutco, Mac) have been meh. On the plus side, I’ve gotten better at sharpening.

I use a genuine USMC Ka-Bar that's over 60 years old. Carry it and cut with it. Sharp as a razor. I just hold it over a thick steak and the meat divides like parting the Red Sea.

I use my edc to do gross shit sometimes.

Good idea to look for. My bad knives are gen. 1 Henckels, my better knives are Damascus.

Hey, I still have the steak knives left out of a block of Chicago knives. The others had large defects from overuse and sharpening....but, the steak knives have been sharpened endless times, and are great for all sorts of things. I have a much better collection of knives for different things, but the multi use of just flexible steel that can be resharpened is awesome. Don't get serrated is all. Edit: I bought the Chicago knife set in 1997.
