The thing is, Taiwan is an island. China is 100 miles away. We have a Navy that is more powerful than all the other navies in the world combined. Could they send rockets and cruise missiles and shells at Taiwan? Sure. But in order to win a war, you have to put boots on the ground and hold the territory eventually. They'd have to do an amphibious invasion that would make D-Day look like a day at the park, and China just isn't equipped to do that and take on our Navy at the same time. China does not want to directly engage the US.
