Yes how depending on if you view the photons or not changes the result. The problem with that is two-fold, the first being that we have the complete and total understanding of all information available in the system (experiment), and two being the assumption that viewing doesn't change some physical phenomena in the system.
For example, if I have a glass top stove turned on and I place my hand on it, the stove top will cool. Not much but it will cool. We didn't always know that, in ages past we would have assumed it stayed the same temperature. We had no idea that energy, some, would be transfered.

We agree on this. Most scientists are so arrogant that they actually believe they have this total understanding..even as they ironically admit that the very reason for their experiments is to gain understanding in the first place.

Every scientific explanation I've heard about this has assumed the opposite: that the very act of observation does have a physical effect... of course, they can't explain why this is.
I've got my own theory. In truth, we live in a digital simulation anyhow. Not that there is necessarily a computer involved, but it is digital in that there is apparently a finite point at which physical matter can no longer be divided down.. IE, at a small enough scale, something either exists or it doesn't.. which means at the basest of levels, all the physical world is binary, 1 or 0. So then, every particle (or lack thereof) is potential in the opposite direction. The outside force which massages physical particles isn't physical itself. It's extra-dimensional. It would have to be. Man is a spiritual being. The spirit realm is the real realm. We're all trapped in a high-def VR scenario, until we're not. If the physical world were analog, the only limitation in dividing matter down would be the size of the knife blade used to do it.

Not a single thing you said after that even suggests that's necessarily the case. What if reality works in a binary sense all the way down? That doesn't mean we're in a simulation. All it means is that all the way down, reality is binary and there is nothing wrong with that. There's also nothing wrong with reality being ternary or quaternary or none of the above.
Me being picky, the example of the hand on the stove is logically different than observing the photon
