You have to cook bear (and cougar) just like we grew up cooking pork not rare. Due to the risk of trichinosis. Exact same reason you wouldnt eat rare pork. But bear can be cooked well without getting dry like beef or deer. Bear meat is very mild flavored. No "gamey" taste that turns some people off from deer or elk. My mom always wants me to give her bear meat, and she is not a fan of deer or elk. But i have to specify, im eating inland mountain bears. They eat berries, baby deer/elk/moose, rose hips, shit like that. Theyre not getting into peoples garbage, or eating fish and skunk cabbage like coastal bears. I am certain the flavor of bear meat would be much different from a coastal or suburban bear.

The only source is to kill one yourself, or have a friend who hunts bears. Cant buy / sell wild game. Bear meat is fantastic though. Its my main source of meat. 2 bears a year here. Only store bought meat thats ever in my freezer is bacon.
