I've done that too. Skewer through it makes it easy to eat but still just as good bare handed.

I have never been able to get pork chops right. Don't get me wrong I have tried but it never works out.

I do the three step breading, fry in cast iron on the stove, then on a baking sheet in the oven at 400 degrees. They turn out pretty good!
