You have a field of view. Regardless of the shape of your field of view, your phone will take up the same percentage of that field of view whether it is turned vertically or horizontally. In that respect, you lose nothing; simply the things you see in your periphery are moved from the sides to the top and bottom

If I'm taking pictures of me disassembling my pedal bearing assembly for reference, everything is framed properly, everything is lined up and in focus, everything is lit without shadows, and it's all in landscape because that's simply the best fit for anyone's horizontal eyeballs.
