You didn't remember it wrong. The Undiscovered Country (The Final Frontier) started and ended with Spock, Bones and Kirk on a camping trip.

Star Trek, the original series, ended here as far as I'm concerned.

I didn't hate that movie. Some of the movies that followed weren't horrible. IMHO the curse of TOS was trying to balance the good science fiction fundamentals of the the TV series with broader audience appeal for the films. Overall I love TOS, but admit it's a mixed bag in terms of quality. The good ones are really unforgettably good, and the mediocre ones are ... forgettable.
