You would think for redundancy sake they would restart two engines and immediately shut one back down after start confirmation of both. Otherwise simply use the redundant engine for the landing.

Why stick all your eggs in one engine basket when you can use two for redundancy? Or is the problem they can't start an engine in the horizontal with the air blowing past?

The problem is most likely a plumbing issue. They are trying to pump liquid sideways to the engine and that aint easy.
