This was mentioned in the other post about "self hosting is not the future". For some people it would be easy-mode. I still prefer to set things up myself though I do run a few "apps" on my TrueNAS Scale to simplify management.

You could setup your SMTP server on a hosted VM with a reputable IP address and have the mail exchange server (the one that receives mail) on your own home, Hillary Clinton style machine.

I’m not paranoid enough to bother though. Unless I get law enforcement after me no one is going to examine my hosted VM’s drive to figure out how things are setup and poke through my mail. It’s private enough.

edit: If you can pass their ridiculous requirements you can also use an external sender like Sendgrid.

email is an untrustworthy service. Do I care that someone maybe saw that I bought 2 FMC 3/4" Right Angle conduit connections and a pack of bushings? No. Would I use email for things more than that? No.

I don’t expect email to be secure unless I’m using PGP, but even having all of your mundane email in the hands of Google, Microsoft, etc. gives them a lot of information about you. Keeping the collected pile of it out of their hands is worth the cost.

You don’t even need to setup your own server. Even a shared mail server run by a small web hosting company beats a typical free mail account for privacy.

I use the domain email I purchase for my web stuff. I wouldn't trust it for really sensitive stuff, but yes - I trust it more than gruegol.
