Nah, evolution makes perfect sense. Thinking you're gonna debunk evolution is like thinking you're gonna prove the earth is flat. Genetics, people of different hereditary groups produce offspring that share their own group's traits because they're passing on what works for their people, you can selectively breed dogs as well as humans, etc. Too much of reality fits evolutionary theory and there's not enough motive to fake it.
But the moon landing was massively politically hyped in the middle of a propaganda war. There's plenty of reason to fake it and no reason why it had to have been real.

Natural selection can be observed in nature. Selective breeding can be observed in agriculture and pet breeding as well as in humans. Selection is a fundamental law of nature. If there is a god who decided the laws of the universe, selection is a law created by that god. If your god did not decide that selection should be the law, a law which you can prove exists and shapes reality, then your god must not be the one deciding the laws of this universe.
If you wish to approach it from a scientific point of view, here is a 5 hour lecture on creation. With slides, fossils, photos, doctors, scientists and everything else.

Evolution does not claim mixed race children will be healthier. Optimally you want someone who's not close enough for your kids to have the problems of inbreeding but not far enough away to have incompatible genes. So you want someone within your ethnic group, or at least your race, but also at least a few generations removed from you for the best chance at getting genes that work well together.
Evolution is why heredity and relatedness matter. We evolved separately for tens of thousands of years making people of different races different. If we were all created by a god in the same image we would not have those differences.
