Stalls like that would have been for elites, your average Roman plebian would have eaten staple foods such as bread and gruel (porridge with animal offcuts, stomach, lips, snouts, assholes, skin, fat) or pottage (stews with available mixed seasonal available vegetable and grains).

There have been several older documentaries on Roman food like Eat history, etc. There was a good one which I can't recall presently with a British guy who spoke perfect Italian, lived and studied in Rome, and showed you through document and excavation types of foodstuffs that were common like bait fish, watered down wine, legumes and flour for processing.
