Interesting analogy: I met a new 'Doctor'... During the course of the visit I relayed an event where I described a person involved as "asian", the 'Dr.' instantly recoiled and uttered "I *couldn't* say that" in an odd undertone, resulting in a rather awkward moment as I dislike being interrupted while speaking, *especially* when I'm the one paying (nor did I care for their tone). I seriously doubt I will be using this 'Dr.'s' services again as I won't abide a racist.
