It hasn't been officially documented in humans yet but I have heard anecdotal reports of it happening. You definitely shouldn't eat any meat from a dear that seemed messed up before you shot it. Handling it when you have a cut on your hand is also a bad idea.

I'm not saying you shouldn't eat deer meat. Just don't eat the diseased sickly ones, don't eat the brains and spinal cords of any deer and you'll be fine.
