It hasn't been officially documented in humans yet but I have heard anecdotal reports of it happening. You definitely shouldn't eat any meat from a dear that seemed messed up before you shot it. Handling it when you have a cut on your hand is also a bad idea.

It wouldn't work for another pandemic because it doesn't spread person to person, aside from cannibals. Any jump to humans would be an isolated case and since prions don't have DNA, it would probably be the result of a mutation in that particular person and not the disease itself changing.
