I don't like Pho. It's basically tasteless soup broth with undercooked vegetables. If the 'Vietnamese' restaurant has Chinese people cooking Chinese style foods, then you'll get something that tastes good.

I would disagree. As as just mentioned below, not all phó places are equal. Try google reviews to find a decent one. It should not be bland. It’s beef onion soup that is cooked for minimum 12 hours. Spiced with savory spices. The beef and onions should have been braised /seared to add flavors of maillard (sp?) reaction.

Vehemently disagree. I’ve had a lot of pho living in places that have higher Asian populations than others. The legit Vietnamese places make good pho - stewing their broth with ox tail for hours to pull out the the flavors before adding spices.

I don’t trust the Chinese…I’ve seen too much of their cut corners to believe in anything they’ve cooked. Thai, vietnamese, and ramen? Sure. Chinese? Nope.

Pho is 100% about the broth, because everything else in it is cheap gook meat and rice noodles.

If you didn't like the broth when you had it before, you didn't have good pho.

The accompanying bean sprouts and basil are optional, as is the Sri racha (a couple drops is worth it), but do add a few squeezed lime wedges. Stir gently, eat leisurely. As a brunch with a Vietnamese iced milk coffee it’s hard to beat. Used to read the Sunday paper at a place near my house every week that way.

There's a Vietnamese place in town I've know about for 25 years. I'll make a point to try it.

Might be good, might not. I find they are basically family run typically, the original owner does a great job, the kids inherit it and slack, and then they hire wahtevers who could care less about flavor profiles. Check it’s reviews sorted by recent.

Oh yeah. I'm a huge fan of Chicken pho - with plenty of sliced red chilli .
