I can generally control myself, although if I find myself locked in a real debate where ideas are being exchanged every few seconds, it's hard to keep my voice from rising. Generally, I make my rational points calmly and quietly, and see them completely ignored by the other party, who jumps on some irrational, emotional response and pounds it to death.
People actually believe they "win" something if they can drown out the person they are arguing with using some meaningless rhetorical trick. It's a Jew thing. Jews do this all the time in arguing. They learn it at some yenta's knee when they are three years old. Whites sometimes try to use it, but not being Jews, they can't make it work as well.
Raising your voice is a hard one. I can feel when I go from normal to aggressive, I just need to better "catch" it, I guess.
The thing about who is loudest, only works when you are surrounded by idiots, which today is all-the-time. It draws others to take their side as well, emotions and whatnot. But I respect the calm, collected one.
The word you're looking for is pilpul.

That's not a real debate. That's some dumb fuck pushing politics/cult.
A real debate involves the exchange of ideas between people who are intelligent enough to hold several ideas in their heads that they don't agree with.
