Thanks for clearing that up. I now have no reason not to use the bacon fat in my fridge to make mayo (I was just going to give it to the chickens). I'll look into the dry-cured bacon. >>I hesitate to say this, but this is one area where government regulation has seemingly proven to be effective and beneficial. If only that was the case everywhere. This sounds similar to what I've heard about commercial organic produce. In theory good, in practice it ends up just using different pesticides that may be worse.
