I would like to know how these hold up in places with a cold winter, or when it gets wet, freezes, thaws and then freezes again a short time later.

You'd want a thatch one then since those are proven in Europe for centuries though I'd avoid a wood stove though since one chimney fire and even if the chimney flue doesn't breakup any sparks out of the top are not going to make it a good time.

Help grows really well in most hard conditions that most other vegetation cannot. It’s great when faced with frost.

Hell a light misting on the outside will windproof it for sure with a very thin layer of ice.
