No rice noodle?

Of course we do have rice noodles. The thing is that we don't say the rice word when it's about it.

炒面 = fried/sautéed wheat noodles

炒粉 = fried/sautéed rice noodles

Also when someone doesn't know or isn't familiar with Southern cuisine (Hong kong or Canton province) and ask what 炒粉 is about, that's when you can say 米粉.

The simple rule of thumbs is if the word 面 isn't present in the noodle dish's name, it's almost always rice flour (and sometimes corn starch).
