My last post explained I was running out of eggs. With just the last couple days near or above freezing, my birds are back in production.

It's a good thing, because people are calling, texting, and emailing me from one ad I posted recently. Most of the time, people want hatching eggs. Now, I've got 6 people wanting eggs for pickling. A handful just want eggs to eat (maybe pickle too, idk), and another handful want a couple/few dozen eggs each to hatch.

Did one of the kardashians eat a pickled egg on tv recently? I'm not complaining, but I do find it unusual.

Pickled eggs are fucking awesome.

Seriously. Easy to make, as well.

What do they taste like? I might have to pickle some to try.

I don't reckon they can be described in relation to anything else.

They taste like pickled eggs.

There's an extra step with quail eggs, but it's still easy. I will admit I'm not a huge fan, but being bite size makes them more palatable.

Egg Pickler here and can confirm. As for shelf stability I will tell you about a jar of eggs found in my cupboard marked only with month. We lived in the house for eight years by that time.

They were so picked that the yolk and white were indistinguishable in color. The texture was like a rubber bouncy ball. One did bounce nicely when gently thrown into the sink. Egg was still edible and did not make me ill. The jar was not sealed. Those had been opened for years.

As for quail eggs I was taught to agitate them with chop sticks while boiling.

Yes, agitating is important to keep the yolks centered. There's also the matter of a thicker membrane than chicken eggs.
