Skinless duck makes a great substitute for a beef roast. The taste and mouth-feel will fool even the most squeamish people (assuming you cut the meat off the bones).

Grind up breast meat 70/30 with bacon (or more 'cuz bacon) to make a burger patty. It's not a total substitute for hamburger, but we can't all have cows roaming around.

I don't know if every type of duck tastes the same, but your meat varieties like Pekin and Cayuga work just fine.

The ones by the road are wild mallards. I'll bet someone around here keeps them in their flock. I'm going to check it out this weekend, see if I can find any for sale.
