I know nothing about chickens, but I have learned to read scientific papers. They use a technology that is known for a long time (https://www.webmd.com/vitamins/ai/ingredientmono-1130/hyperimmune-egg) and did it with SARS-2 spike proteins because that ensures attention and funding.
